5. Do not forget the antioxidants

We face daily attacks from pollutants, chemicals, smoke, junk foods, pesticides and additives that generate a tremendous amount of free radicals (oxidants) - not to mention stress - in our bodies. If they encounter no defence or opposition, these free radicals start a chain reaction that causes the body's cells to reproduce abnormally, affecting body tissues and eventually its organs. Since brain cells do not divide, it is very crucial to protect them by consuming antioxidants. 56 As detailed in the previous chapter, a wide range of antioxidants is found in foods of plant origin, and a balanced, healthy diet can supply you with your body's needs. Some examples of powerful antioxidants are: 56 Restak, 1997. •!• Vitamin E, found in nuts, seeds, whole grains that include the germ, and vegetable oils. It is fat soluble, so it protects the membranes and lipids of nerve cells. •!• Vitamin C, found in citrus fruits, broccoli, coloured bell peppers, kiwi fruit, berries, tomatoes, dark green leaves and the cabbage family. It is water soluble, so it protects the inside of the cells and helps to regenerate vitamin E. •!• Selenium, found in nuts, seeds, seafood, organ meat, eggs, mushrooms and molasses. Selenium is an essential part of an antioxidant enzyme, glutathione peroxidase, which protects the body from oxidative damage and reduces the requirement for vitamin E. 57 •!• Beta-carotenes found in carrots, sweet potato, apricots, peaches, squashes, broccoli, and green leafy vegetables.
